Kings of Convenience feeds my soul.
So, during the holidays, I have been enjoy life as it is. Not making any plans, just chillin' on the couch reading, conjuring inspiration. And one of the blogpost that got to me was this post about what kind of woman that you'd want to be. I thought it was a pretty legit question as I am indeed getting nearer to the big 2-0 next year. I bet my lil' teenage alarm clock is ringing, "Time to grow up, Char!", ascending in crescendo. Well, it certainly got me thinking.
I want to bake.
I remember I used to bake cakes and cookies with my mom, come Chinese New Year or the holidays. And I'd have tons of fun playing around with the dough and before I know it, a batch of freshly-baked cookies were out of the oven, ready to be eaten! LOL
Well, came across this recipe on Foxy Whiskers and decided to try baking WAGON WHEELS! Before this, like you, I've never heard of it. I was like "Sounds like you just said wagon wheels, as in wheels of a wagon. Haha!" Well, you read it right, they are an All-American snack, usually served in kids' parties. There's two cookies with marshmallows in the middle and coated with chocolate. Sounds delectable huh?
Here's how to make it. I made 14 of them as a birthday gift for my grandma and of course, to share the sweet goodness with all my cousins up in KL. So, bear in mind, the instructions below are to be 14+ wheels.
You'll need:
- 125g (4.4 oz) butter, softened
- 165g (3/4 cup) sugar
- 1 egg
- 300g (1 1/2 cups) self-raising flour
- marshmallows
- raspberry jam
- a bar of chocolate (melted)
Follow these steps!
- Beat the butter and sugar in the bowl of electric mixer until lightened in colour and texture. Beat in the egg. On the lowest speed, or by hand, stir in the sifted flours into the mixture.
2. Turn the dough out on to a floured surface and knead until smooth. Roll between two sheets of baking paper until 3 mm (1/8") thick. Cover and refrigerate for 30 minutes.
Preheat the oven to 180°C (350°F).
Grease two oven trays and line with baking paper.
3. Using a 7 cm round fluted cutter, cut 14 rounds from the dough. Place 3cm (1") apart on trays. Bake for 12 minutes and then cool on wire racks.
4. Turn half the biscuits base-side up and place back on oven tray. Use scissors to cut marshmallows (or just tear them apart like a beast like I did) in half horizontally. Press four marshmallow halves, cut side down, onto biscuit bases. Bake for 2 minutes.
5. Spread remaining halves with jam and press, jam-side down, onto the softened marshmallows. Stand for 20 minutes or until marshmallows are firm.
WHEN IT'S TIME TO EAT:
6. Melt the chocolate in a medium heatproof bowl over a saucepan of simmering water. Remove from heat and stir in the oil.
(What I did was put the bar of chocolate in the car for half a day and you'll get evenly melted chocs that are not too hot ;D)
7. Dip the biscuit wheels into the chocolate and, using a metal spatula smooth away any excess chocolate. Place on baking paper-lined trays to set.
8. ENJOY!
Though mine came out a little too hard, must be because of the overdose of flour, I reckon. But it tasted really good! Am thinking of making more to bring them to school and share the sweet cookie goodness!
